The best we ate in 2014
The end of the year is approaching and it is time to review the best dishes of 2014, returning to the places where 20 perfect crimes were committed. Teresa Castro Viana and Mariana Correia de Barros gathered the evidence. Filipe Paiva and João Saramago photographed the scenes.
Chaparro – Real Hamburgueria Portuguesa
“This Real Hamburgueria (…) is one of the best examples of what you can do with a slice of minced meat. (…) The basis is tall, well-baked hamburgers, the notorious caramelizing aromas of protein.” The words are from Alfredo Lacerda, critic, who was enchanted by the hamburgers of Portuguese flavors. A highlight is the chaparro, made with spinach, black pork farinheira, Serpa DOP cheese (mix of sheep and goat), egg and meat of various cuts of calf.
